Cool ranch veggie pizza appetizer is a popular favorite at parties and family gatherings and seems healthy because it's often covered with raw vegetables, but can often be heavy in mayonnaise and buttery crescent roll dough. This cold "pizza" can be prepared as a healthier option by exchanging crescent roll dough for low-carb or gluten-free tortillas (we recommend La Tortilla Factory). Pack on colorful vegetables like raw broccoli, shredded carrots, diced tomatoes and green pepper and enjoy as a snack (or a meal) anytime. It also makes a great appetizer or picnic dish. Cut into smaller sections for healthy, bite-size nibbles!
2 LaTortilla Factory (or other similar) low-carb wraps (large)
½ cup reduced-fat chive and onion cream cheese
½ cup light sour cream
1 package Hidden Valley Ranch Dressing (use dry mix)
⅛ cup shredded carrots
¾ cup raw broccoli
¾ cup diced tomatoes
⅛ cup diced green pepper
⅛ cup diced cucumbers
¾ cup Kraft Light shredded Colby & Monterey Jack cheese
½ cup sliced black olives
- Mix cream cheese, sour cream, and ranch dressing packet together.
- Spread evenly on tortillas.
- Top with veggies and olives and sprinkle with cheese.
- Cut each tortilla into four pieces and serve.
