INGREDIENTS

3 pounds skinless, boneless chicken breasts
1¼ cups whole wheat Italian bread crumbs
½ Smart Balance Omega Plus Light Mayonnaise Dressing (or other light mayo of choice)

DIRECTIONS

  1. Preheat oven to 425°.
  2. Brush mayonnaise on chicken.
  3. Pour bread crumbs onto a large plate and roll chicken until coated. 
  4. Place chicken breasts in foil-lined pan and bake for 40-45 minutes or until meat thermometer registers 165°F.
