No-bake energy bites are easy to make and can be a great source of fiber and protein. The best part is they are completely customizable and many of the ingredients are optional or can be swapped out for substitutes. Get creative and find a combination that you can have on hand for an easy snack that will keep you and your sweet tooth feeling satiated.

Ingredients

1 cup old-fashioned oats 2/3 cup shredded coconut (optional)
1/2 cup creamy peanut butter (substitute with almond butter)
1/2 cup ground flaxseed
1/4 cup cocoa powder
1/2 cup chocolate chips or cacao nibs (optional)
1/3 cup honey
1 tablespoon chia seeds (optional)
1 tablespoon sunflower seeds (optional)
1 teaspoon vanilla extract (optional)
1 teaspoon cinnamon (optional)

Assembly Instructions

1. In a large bowl, add all ingredients together and mix until well combined. 

2. Cover the mixing bowl and place in the refrigerator for 1-2 hours. This gives the mixture time to set so that it sticks together more easily when you are ready to roll! (see next step) 

3. Remove from refrigerator and roll mixture into 1-inch balls and set on parchment paper.

Energy bites can be enjoyed right away or they can be stored in a covered baking dish in the refrigerator for up to a week. They can also be stored in the freezer to be enjoyed at a later time.
